At Eataly, this position is referred to as a Lead Cook. A Lead Cook in our Central Kitchen transforms high-quality, unique ingredients into authentic Italian dishes through preparing, cooking and packaging food items in Eataly’s exciting, high-volume production kitchen to be used at various Eataly restaurants and outlets. The Lead Cook assists in overseeing other prep cooks and daily task lists. Reports to the Sous Chefs and Sous Chef Manager.
- Oversees other prep cooks and ensures performance standards
- Portions, cuts, slices, dips, batters, breads, whips, beats, maintains holding temperature, fries and sautés
- Selects cuts of meat, poultry, shellfish, fish, game or vegetables to be used for frying or sautéing
- Packages items along with appropriate garnish
- Follows recipes and complies with portion sizes, quality standards, department rules and procedures, and Department of Health regulations
