The Cutter is one of the most important positions in our restaurant. This role works the front of the house service line , greeting guests and slicing our oak-fired meats to order. Cutters are responsible for handling brisket and other meats, weighing portions, assembling sandwiches and platters, and maintaining Redwood’s strict standards for quality, speed, and presentation.
